Newborn gets frustrated and frantic when trying to latch?

I'm exclusive BF my week old son however sometimes before latching on he gets himself all worked up,; moving around, crying, hands in his mouth, etc. I try to help him by gently stroking his cheek or repositioning him but is there something more I can do? Sometimes it takes minutes for him to just relax and realize that my nipple is right there for him. It is also a problem when he becomes "milk drunk" and falls off but is still hungry. When he does latch he latches correctly. I am a little engorged so idk if that makes it worse? I try to feed him when he shows signs before crying/getting worked up about being hungry. Any advice on how to soothe him or help relax before feedings would be much appreciated. Thanks
